RemoteFX is not a feature of Windows 7. It is Server 2008 R2-exclusive. It is now only client side supported, too. Also, this is not quite true, there are quite some smaller tweaks, for a little more detail, consult the release notes of the RC. Plus - also for HyperV - there is now support for dynamic memory which allows a much higher VDI density, estimates go up to 40%. Still, not as if that would be any interesting for you if you don't know what that means.

'They' say? Believe me, that's non-sense. Server 2008 R2 is not any faster than Windows 7. There are a few reasons why you might want Server 2008 R2 as for Workstation usage, but if you don't know of them, you don't need them either. It's mainly for HyperV anyways.
I would recommend you Windows 7, since Server 2008 R2 requires some tweaking for workstation usage, is more expensive (as for cracks, you can only crack up to the standard version, anything above that is not licensable per OEM, thus all kinds of Windows loaders and similar jackshit do not work. Only way is a cracked KMS), and delivers no advantage. On the contrary, some features which are handy on a workstation - ie the games integration or WinEI - are unavailable. Furthermore, H.264 is not licensed with the system, raw sockets are available (which is not a good thing on a client platform), and so on.
Don't use it if you don't need any specific feature it delivers.
